Veganomicon’s Braised Seitan with Brussels, Kale and Sun-dried Tomatoes

OK, so I’m guessing this doesn’t rock everyone’s boat . . . but this is what I made for dinner tonight. And not for the first time, mind you. Although I substituted some broccoli and cauliflower for the brussels this time. Here’s what the dish looks like.

The pic is not mine, though. Mine was served over mashed potatoes instead of with polenta. I always forget to take pictures by the time dinner is ready and served. Love it. Call me crazy. But I love it.

In order to complete my assignment this week, I need to create a trackback on my personal blog (here) to a classmate’s group blog. The good thing is that there is a trackback on James’ and Jeff’s Web 2.0 Aggregators blog, so I can complete this task.

I’m not sure if this (the fact that there are trackbacks on their site) is a function of the WordPress theme or what it is. For instance, I have not discovered how to insert or ensure that our—mine and Tracy’s—group blog (Packing For the Carry-On Traveler) provides the ability for users to trackback to us. And yet a trackback seems to be part of the design of the theme of my personal blog (which coincidentally is also the theme used by James and Jeff).
